I needed some help while photographing for this post and Mr Smorgasbord came to my aid. See the twig in his hand? That's him trying to scare the girls (aka the chicks) from eating the food on my plate while holding the camera. It's difficult to be a blogger sometimes, the obstacles you have to overcome are enormous.
However- making this dinner was a piece of cake. And so freaking good!
1 kg chicken mince
2 large red chilis-finely copped
4-5 cm ginger-grated
6 cloves of garlic-grated
1 tsp sesame oil
1-2 tsp fish sauce
1 lime- juice and zest
Mix, make patties (I got eight) and fry them in oil.
Remove the patties from the pan and add (in the frying pan):
1-2 cans of coconut creme (depending on how large your cans are, the ones I use are slighter smaller than a regular can)
2 heaped tbls red curry paste
Whisk and let the patties slide back in the pan.
Cook for 10 minutes. Sprinkle some fresh coriander on top and serve with a crisp salad.
Btw- the girls didn't get a taste of this. They get to taste a lot of what I cook, but never, ever chicken. Yikes. Makes me shrug just to think about it.
